Restaurant Bins & Grease Trap Compliance Guide (Australia 2025)

Running a kitchen is hard enough without chasing bin issues or grease trap warnings. This guide keeps it practical: which bins to use, how often to collect, and what councils expect.

The essential setup

  • General waste: 240L or 660L rear-lift for daily prep waste. Busy venues often run 660L 3-4x weekly to avoid overflows and pests.
  • Commingled recycling: 240L/360L/660L for bottles and cans; keep liquids out to avoid contamination fees.
  • Cardboard: Flattened cardboard in a 660L or 1100L bin; keeps general waste weight down and lowers costs.
  • Organics/food scraps: Required for larger generators in NSW/VIC. 240L with liners; collect 3x weekly to prevent odour.
  • Grease trap: Pump-out schedules are set in trade waste agreements. Typical frequencies:
    • NSW (Sydney Water): every 1-3 months depending on volume
    • VIC (Greater Western Water/Yarra Valley): every 8-12 weeks
    • QLD (Urban Utilities): every 1-3 months

Right-size your restaurant bins

  • Small cafe: 240L general (3x weekly) + 240L commingled (2x weekly) + 240L cardboard (weekly)
  • Busy casual dining: 660L general (3-4x weekly) + 360L commingled (2-3x weekly) + 660L cardboard (weekly) + 240L organics (3x weekly)
  • High-volume venue or food court: 1100L general (daily) + 1100L commingled (3x weekly) + 1100L cardboard (2x weekly) + 240L organics (4-5x weekly)

Rule of thumb: If bins are consistently over 70% full, increase size or frequency. Over-servicing? Drop a pickup and monitor for two weeks.

Grease trap: avoid fines

  1. Keep a simple log near the trap (date, contractor, volume removed).
  2. Train staff: no oil down sinks, use strainers, wipe pans before washing.
  3. Schedule pump-outs ahead of peak periods to avoid backups.
  4. Keep manifests for inspections (usually 2-3 years of records).

Contamination cheatsheet

  • Coffee cups, food-soiled boxes, and soft plastics do not belong in commingled or cardboard.
  • Cooking oil goes to oil recycling, not the grease trap and not general waste.
  • Label bins with 3-5 clear examples in plain language; keep lids closed to deter pests.

Costs and quick savings

  • Cardboard separation typically cuts 10-20% off total waste bills.
  • Switching one 1100L general waste (3x weekly) to a 660L organics + 660L general often saves $70-$120/month while reducing odours.
  • Missed collections from blocked access cost more than an extra pickup-keep the bin bay clear.

What inspectors look for

  • Current trade waste agreement and pump-out history.
  • Clean, lidded bins; no liquid leaking; lids closed.
  • Clear separation between food prep and bin storage; no food waste stored uncovered.

When to call for help

  • Overflow or odour twice in one week.
  • Staff confusion on what goes where.
  • Grease trap overflows or slow drains.

We can set up restaurant bins and grease trap cleaning on one schedule, with the right bin mix for your kitchen. Book a quick setup call or head to our grease trap service page to get pricing for your suburb.
